I'm still learning the ropes of working with couverture chocolate, and Pastry Depot has been a lifesaver. Their products always arrive on time and in perfect condition—even in warmer months. I especially appreciate the detailed descriptions and suggested pairings on the site. Makes experimentation so much easier.
